Vegetable Ragout

The summer is here, so we need to think more of summer foods / dishes. Vegetarian cooking is easy and fun! Cooking time 30 min, yields 2-3 portions.

I am cooking ragout today and sharing it with you for inspiration. This dish can be eaten hot or cold. If you need more protein in your diet, add tofu with soy sauce. See the ingredients and feel free to change the recipe as you see fit.

  • 2 potatoes diced
  • 1 onion diced
  • 1 bell pepper (sweet pepper)
  • 3 cloves of garlic diced
  • 1 zucchini sliced
  • 1 broccoli crown cut
  • 1 tablespoon of hot pepper sauce / salsa
  • salt to your taste

Place potatoes in the skillet, fry them for 10 minutes, add onion, garlic, pepper, and in 5 minutes add zucchini and broccoli. Stew under the lid for another 5 min, add red sauce and salt. Sprinkle with lemon or lime juice. The dish is ready. Feel free to serve it with rice or pasta.

P.S. You can add eggplant into the mix of vegetables and use tomatoes instead of red sauce. It will make your dish less acidic. You can cook them separately and add into the mix. Make sure not to overcook veggies, consider undercooking them instead.

Fried Gluten (Seitan) with Buckwheat

Vegetarian recipes from me, quick and easy to fix.

Recently I have been experimenting with meat substitutes, gluten is my favorite so far. You can spice it any way you like, for example, if you like red sauce gluten likes it too, I mean they go together really well. I usually use medium hot salsa for that, you can also use real tomatoes and garlic if you wish.

This recipe is very easy to make, it serves 2-3 portions. You can pack it as a take-away lunch to work or school. Buckwheat is superfood, I recommend it to anyone who wants to experiment with grains and stay fit as a fiddle and strong as a bull. Buckwheat goes together well with any vegetables.

Ingredients:

1 cup of gluten cut

0.5 cup of mushrooms (optional)

2 tablespoons of vegetable oil for frying

2 tablespoons of soy sauce

1 tablespoon of sugar

2 tablespoons of flour

0.75 cup of water

1 teaspoon of onion powder (optional)

0.5 teaspoon of garlic salt (optional)

Buy or make gluten (seitan), cut it, place it in the frying pan for 3 minutes, add mushrooms and flour. After 2 minutes add soy sauce, sugar, spices and water. This will make a nice gravy for your protein. Wait for the gravy to thicken over the low heat for 3-5 minutes.

Serve gluten (seitan) with buckwheat and bok choy. Buckwheat should be roasted and not green. Bok choy should be green, and not roasted. I usually boil bok choy for 3 minutes with salt. If you don’t have bok choy use other green vegetable instead, it can be broccoli or green beans.

Buckwheat takes about 15 min to cook, you need one cup of buckwheat groats and one cup of water, boil it with salt. It’s ready when it’s tender and all water evaporates, feel free to add some butter at the end. Serve hot. Enjoy and let me know how it turned out!

First of, I hope that you have already tried my version of vinegret (beet salad) and loved it at first bite, second, I wanted to share another super food recipe for you to stay young and beautiful, like Aphrodite. To make this heavenly dish you are going to need:

  • 1 beet, boiled and diced
  • 0.5 cup of salad greens (arugula + spinach)
  • 0.5 cup of sauerkraut
  • 2 celery stems
  • 0.5 cup of green peas
  • 0.5 cup of dried cranberries
  • 1 tablespoon of lemon or lime juice
  • 1 tablespoon of sunflower oil
  • salt to your taste
  • mild jalapenos (optional)
  • red onions (optional)

Put these ingredients in a bowl, mix them all together, serve with pasta and broccoli (boiled). Enjoy!

My Version of Vinegret (beet salad)

If you are a foodie, you definitely have to try my version of ‘vinegret’ (beet salad). It’s very easy to make and good for any diet, every time I go to a potluck, I take it with me. It’s vegan, vegetarian, gluten free and simply magical super food. My grandma used to make it a lot for any occasion. I make it today slightly differently, due to dietary restrictions I can’t have raw onions, but I love them to the moon and back. Let me get started with the ingredients here:

  • dark red beans – 1 can or 1 cup,
  • 2-3 pickles in brine,
  • celery – 2-3 stems,
  • garden peas – 0.5 can,
  • 2 boiled beets or 1 can of beets,
  • unrefined sunflower oil – 2-3 tablespoons,
  • lemon or lime juice – 1-2 tablespoons,
  • stone ground mustard – 1-2 tablespoons,
  • salt, black pepper.

Cut celery and beets, mix all the ingredients together, season and serve with real bread. If you find it hard to get any of these ingredients, try one of the Russian stores in town for sunflower oil, pickles in brine or bread.

Beans, beans, magical fruit

The more you eat, the more you toot

The more you toot, the better you feel,

So eat your beans with every meal.

In a classic version of vinegret (beet salad) there are no beans (!), but you want to add 2 boiled potatoes and 1 boiled carrot diced instead. Feel free to add an onion diced, or pickled red onions, or onion greens to your taste, I usually skip those.

Also you can make it with sauerkraut instead of pickles, I add both ingredients if I have them available. Enjoy your superfood and let me know if you had fun making and eating it!
